This simple, 5 ingredient, nice cream is a crowd pleaser for all taste-buds. Coconuts, almonds, chocolate, and bananas. A better food combination, likely, does not exist! With healthy fats, just the right amount of sweet, a bite of crunchy, and a tad savory. This ice cream can be made in a pinch, on a budget, and won’t disappoint.
It’s 8 o’clock and the munchies are setting in. You need something quick, that doesn’t sacrifice flavor, and will keep you on track towards your health goals. This nice cream will do just the trick.
All that is needed, besides 5 minutes of your time, is your favorite blender, unsweetened coconut flakes, raw (hopefully sprouted) almonds, mini chocolate chips, and some frozen bananas.
I will admit, investing in a high-powered blender, albeit expensive, was likely the best investment I have ever made. This is no exaggeration! In our household, there is no product that gets as much use as our Vitamix. Morning smoothies, afternoon soups, mid-afternoon chocolate hummus, and evening nice creams. Protein bars, desserts, breads, brownies and blondies are all on the Vitamix’s to-do list. Now that that’s out of the way, let’s begin!
Almond Joy Nice Cream
- 4 Whole Frozen Bananas
- 2 Tbsp Almond Milk (or milk of choice)
- 1/4 Cup Unsweetened Coconut Flakes
- 1/4 Cup Raw Unsalted Almonds
- 2-4 Tbsp Mini Chocolate Chips Vegan, if applicable
Place bananas and milk of choice into blender. Use push-down stick, if available, and blend until smooth. Once desired consistency is achieved, add in the rest of the ingredients and quickly pulse to rough chop.
