This quick recipe is sure to impress the little ones! Free of refined sugar, and a punch of protein, fiber and potassium. Dessert, anyone?
Ingredients:
- 2-3 Organic bananas
- 1 Tbsp. organic and cold-pressed coconut oil. This is my ultimate favorite brand due to flavor, texture and processing standards. Completely Free from: PEANUT, Gluten, DAIRY, Heat, Processing, Sugar, Salt, Gluten, Pesticides, Artificial flavors/ colors, Preservatives, and GMO’s.
- 1 Cup dark chocolate chips (vegan, if needed)
- Optional: Chopped nuts and/or unsweetened and shredded organic coconut
Directions:
Slice bananas in half. Place skewer or wooden Popsicle stick inside the center of the banana (roughly halfway). Meanwhile, place chocolate chips and coconut oil in a glass bowl. If you have a coffee pot, feel free to place bowl on coffee warmer and voila, it will melt to perfection shortly. Otherwise, place bowl in microwave for 30 seconds. Stir, and repeat an additional 30 seconds. Continue this process until all the chocolate has melted and is smooth (this prevents the chocolate from burning). Roll bananas in chocolate, or drizzle chocolate on top, depending on how much gooey goodness you want. You can then roll bananas in nuts/coconut or sprinkle some on top. Place bananas in freezer to store, and eat up!
